苦瓜鹹蛋


重點:
1‧要炒出鹹蛋的香氣
2‧要降低及消除苦瓜的苦味
3‧苦瓜囊要刮除乾淨


食材:

鹹蛋黃3顆(壓泥)

鹹蛋白1/2顆(切末)

白苦瓜1條(去內囊,切薄片)

蔥2支(蔥白切末、蔥綠切花)

蒜末1顆、辣椒1支(切小段)

高湯200c.c.

薑末1匙

調味料:



做法:
1‧苦瓜對剖去囊,切薄片;蔥切蔥花;鹹蛋對剖,蛋黃及蛋白分開放,備用。

2‧取一水晶碗,將白苦瓜加入1茶匙鹽,抓醃均勻後放置3分鐘,待出水後將水濾出,備用。

3‧起鍋熱2大匙油,放入鹹蛋黃炒至起泡後,
蔥 白末、蒜末、薑末拌炒

4. 入苦瓜翻拌均勻,接著辣椒末、蛋白半顆量、高湯1匙、少許糖調味並翻炒均勻

5. 最後起鍋前加入蔥花和剩下的辣椒即完成。
